Low-Fat Zucchini Chocolate Cookies

1 cup sugar
2 Tbs oil
1 tsp vanilla
1 1/2 cup shredded zucchini
2 1/4 cup white whole-wheat flour
1/3 cup cocoa
2 tsp baking soda
1/4 cup salt
1 cup chocolate chips
Options: peanut butter chips, 1/2 tsp peppermint extract, nuts

Stir together sugar, oil, vanilla and zucchini.  In a small bowl combine flour, cocoa, baking soda and salt . Stir the flour mixture into the zucchini mixture. Stir in chocolate chips and any other options being used.  Use a large cookie scoop and drop 24 dough balls onto two parchment lined cookie sheets. Flatten each cookie with your fingers and bake at 375* for 10 minutes.
