Thai Red Curry Beef

  • 2 pounds lean beef stew meat 
  • 1/8 teaspoon salt 
  • 2 cups finely chopped onion (1 onion) 
  • 2 colored peppers sliced
  • 1 can mushrooms
  • 4 garlic cloves, minced
  • 3/4 cup lower-sodium beef broth 
  • 1 tablespoon dark brown sugar
  • 3 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 1 (13.5-ounce) can light coconut milk
  • 1 jalapeno pepper, minced
  • 2 cups bagged baby spinach leaves
  • 2 T corn starch
  • 2 T water
 
 
  1.  Heat a large dutch oven over medium-high heat. Add beef; cook 5 minutes or until browned, stirring occasionally. remove meat from pan and sprinkle with salt.
  2.  Return pan to medium-high heat. Add onion,peppers and garlic; saute 5 minutes or until tender. Return beef to pan and add mushrooms. Combine beef broth and next 6 ingredients (through jalapeño); pour over beef. Cover and cook in a 325* oven for 1 1/2 hours.
  3. Remove from oven and stir in spinach. 
  4. Combine corn starch and water, stir into Curry
  5. Serve over rice.

Savory Pot Roast

2 to 2 1/2 lb beef bottom round roast
2 tsp olive or vegetable oil
2 or 3 medium potatoes, cut into 2-inch pieces
2 1/2 cups baby carrots
2 cups sliced mushrooms or one 8oz can mushrooms
1 stalk celery, sliced (1/2 cup)
1 medium onion, chipped (1/2 cup)
1 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme leaves
1 can (14 1/2 oz) diced tomatoes
1 can (10 1/2 oz) beef broth
1 can (5 1/2 oz) v-8 juice
1/4 cup flour

Trim exess fat from beef. Heat oil in skillet. Brown beef, turning until brown on all sides.
Place potatoes, carrots, mushrooms, celery and onion in slow cooker, sprinkle with seasonings.
Place beef on vegetables. Pour tomatoes, beef broth and v-8 juice over beef.
Cook on low for 8-10 hours
Remove beef and vegetables from cooker.
Remove 1/2 cup of the juices and mix with the flour until smooth. Gradually stir flour mixture into remaining juices. Cook on high for about 15 min or until thickened.
Serve sauce with beef and vegetables.

Burgundy Stew

2 lb boneless bottom or top round, cut into 1-inch pieces
4 carrots, cut into 1/4-inch slices (2 cups) or 2 cups baby carrots
2 stalks celery, sliced (1 cup)
2 medium onions, sliced
1 can (14.5 oz) diced tomato's
1 8 oz can mushrooms
3/4 cup beef broth
1 1/2 tsp salt
1 tsp dried thyme leaves
1 tsp ground mustard
1/4 tsp pepper
1/4 cup water
3 Tbs flour


Mix first 11 ingredients in a 3 1/2 to 6 quart slow cooker
Cover and cook on low for 8-10 hours or high for 4-5 hours.
Mix water and flour; gradually stir into beef mixture to thicken.

Shepperd's Pie

I tend to call this recipe Hamburger Pie. This is a lightened up version.

1 lb of extra-lean ground beef
1 C beef broth
1 tsp pepper
2 bay leaves
2 whole cloves
Dash of dried thyme
2 C sliced carrots
1 C diced onions
1 4oz can mushrooms
1 C diced celery
1 can corn
1 C peas or 1 can green beans

1/4 C + 1T flour
2 1/2 to 3 C beef broth

8 servings of prepared flake potato's

Spray a casserole dish and preheat oven to 375*

Brown beef and onion, drain. Add 1 C beef broth, bay leaves, cloves thyme, pepper, carrots, and celery. Simmer for 30 minutes or until the liquid is absorbed.
Add mushrooms, corn, peas or green beans simmer for 5 minutes.

Put flour into a bowl and gradually add broth whisking constantly. Add to beef mixture. Simmer for 3-5 minutes until thickened. Remove bay leaves.

Transfer mixture to prepared casserole dish. Evenly spread prepared mashed potato's over beef mixture.

Bake for 10-15 minutes

Taco Salad

Baked Doritos
1 lb Hamburger
1/2 pkg Taco seasoning package
Shredded cheddar cheese
Shredded lettuce
Tomato's
Olives
Tomato soup
Fat-free sour cream

Instructions:
Brown hamburger and season with taco seasoning.
To build individual taco salads place Doritos on plate pile on hamburger, cheese, lettuce, tomato's, olives. Ladle on desired amount of prepared tomato soup. Top with fat-free sour cream.
Use the Doritos to spoon up toppings.

Hamburger Stroganoff

1/2 lb cooked extra-lean ground beef
1 T dried onions
2 cans Campbell Cream Of Mushroom Soup
1/4 soup can water
1/2 cup fat-free sour cream
1 1/2 tsp Worcestershire sauce
4 oz can mushrooms
no-yolk egg noodles

Brown hamburger with dried onion. Add mushroom soup and water(until desired consistency.) Mushrooms, Worcestershire sauce and sour cream. Combine with cooked egg noodles and serve.

Macaroni Casserole

1/2 lb extra-lean ground beef
2 clove garlic clove(s)
1/2 cup onion(s)
15 large olive(s)
4 oz canned mushrooms
2 28 oz cans Spaghetti Sauce
16oz of any small pasta
1 cup part-skim mozzarella Cheese

Instructions:
Brown hamburger with onions and garlic, drain. Add spaghetti sauce, olives and mushrooms and simmer. Cook macaroni then add it to the sauce.
Pour the mixture into a 9x13 pan and bake at 350 for 15 minutes. Sprinkle cheese on top and bake for 5 more minutes.
Serves 8

Suz's Beef Chuck Pot Roast

1 cup water
2 Brown Gravy packets
2 Golden mushroom soup
Carrots
Potato’s
Chuck roast
Combine first 3 ingredients in medium bowl. Pour over roast and veggies. Cook at 350 degrees for 4-5 hours.

Suz's Beef & Broccoli

Marinade

1 T. soy sauce
¼ tsp ginger powder or ½ tsp fresh ginger
1/8 tsp garlic powder
1 T Sugar
1 T cornstarch

Sauce

1T. Oil
2 Cups Water
3 Beef Bullion Cubes or 1 T. beef bullion granules
½ cup oyster sauce
1T. Sugar
3T Cornstarch

Sliced Beef sirloin or Round steak

Marinade for 1 hour. Seer steak than add prepared sauce. Add broccoli, simmer until broccoli is tender. Serve over rice.

Suz's BBQ Sandwiches

2 cups shredded cooked pot roast
½ cup chopped onion
2 T butter
1 cup Ketchup
¼ tsp salt
1T Sugar
pepper
1T liquid smoke

Sauté butter and onion until onion is tender, add the rest of the ingredients for the sauce bring to a boil. Cover and simmer on low for 10 min. Add meat and simmer for 5 more min.
