Simple Roast Chicken

1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon cloves
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
5 gloves garlic, crushed
1/4 onion, chopped
4 lb Whole chicken

Rinse chicken in cold water and pat dry.
Combine first six ingredient in a small bowl. Rub spice mixture under the skin, in the cavity and on the skin. For most flavorful results, cover tightly with plastic wrap and return to fridge for 24 hours.

Remove from fridge and place bird breast side down in a roasting pan on a rack.
Stuff cavity with crushed garlic and onion.

Roast at 350* for up to 2 hours. Check at 1 hour 45 minutes. When thigh reads 165* remove from oven and cover with tinfoil for 20 minutes.

Yummy! And oh so easy!
