Whole Wheat Flax Seed Oatmeal Cookie

These are my new favorite cookies!

This recipe has been modified many times.

These modifications make the cookies chewy and soft in center and wonderfully crispy at the edges.

1/2 cup dark brown sugar
1/2 cup granulated sugar
1/2 cup melted butter
1/3 cup pureed white northern beans
2 tsp vanilla extract
1 egg + 1 egg yolk
1/4 cup ground flax seed meal
1 cup White whole wheat flour
1 1/2 cups quick rolled oats
1/2 tsp baking soda
1/2 tsp baking powder
2T dried tart cherries
2T dried blueberry's
2T dried cranberries
2/3 cup semi-sweet chocolate chips

Combine melted butter and sugars stir until well combined. Let sit for 3 minutes. Add egg, egg yolk and vanilla. Stir again for 30 seconds and let stand for 3 minutes. Add flax seed and pureed beans and stir again for 30 seconds and let stand for 3 minutes.
Combine flour, quick rolled oats, soda and baking powder.
Combine flour mixture to butter mixture.
Stir in the chocolate chips and diced dried fruit.
Drop by heaping Tablespoons onto parchment lined baking sheets.
Bake at 350 for 10-14 minutes until just starting to brown and centers are still soft.
Remove from the oven before the centers are set. Cool on the pan for 2 minutes, cool on a cooling rack.
